High-quality honey storage

China produces an annual output of 150,000 tons of honey, ranking second in the world. Honey has become an important export material. It is very important for science to store honey and maintain high quality. 1. Use a suitable storage container. Honey is weakly acidic and can oxidize with metals. Therefore, non-metallic containers should be used, such as storage in cylinders, casks, and non-toxic plastic buckets. Can not use iron storage, because the rust is easy to make honey black. If galvanized or tin-plated iron buckets are used, brush the strong resin coating on the inner wall of the bucket, or line the non-toxic plastic bags, otherwise it will increase the content of zinc and tin in the honey. Honey storage pools can be established in areas with high honey yields. When storing, please pay attention to the fact that honey cannot be overfilled in the container, especially when transporting, set a top clearance of 25% to 30%. 2. Store the variety. Even the honey collected in the same area has different varieties, such as nectar of Milk Vetch, nectar of rape, citrus nectar, nectar of Vitex negundo, nectar of jujube and so on. Each type of honey has its own characteristics and flavors, suitable for different consumer tastes, so it is necessary to store the source of the flowers in a separate way to prevent them from mixing and to maintain their original features. 3. Keep honey clean. The honey is placed in a taller barrel and allowed to settle in a room with high temperature and dryness. The time required for precipitation depends on the specific temperature. It takes 3 days at 20°C and only 10 hours at 35°C. At this time than the major debris will sink, through the barrel can be obtained to clean the girlfriends. 4. To prevent honey fermentation. Yeast is often present in honey. When the temperature and humidity are appropriate, it will grow and multiply, leading to rancidity. Immature honey, with a large amount of water, is most suitable for yeast growth and should be pretreated. The method is to hold the open mouth in a large container, open and ventilated in a room with a temperature of 25° C. or more for several days, and evaporate the excess moisture, which is to be fully matured and then stored. 5. To prevent honey sucking and smelling. The hygroscopicity of honey is very strong. When the honey is opened in a room with a relative humidity of 81%, the moisture can be increased to 32% after 3 months. Even mature honey will absorb moisture and ferment. Therefore, sealed containers should be used and stored. In dry, ventilated rooms, strong odor items must not be placed in the room where honey is stored to prevent honey from absorbing odors. 6. Crystallization of honey. Crystallization of honey becomes lighter and thickens in shape, which is beneficial to storage and transportation. In order to speed up crystallization, 0.5% of Chen honey can be mixed in honey. However, the fresh honey on the market must maintain the appearance of a transparent, liquid state, so to prevent crystallization. Crystallized honey should be thawed, ie, heated in a double pot. The outer layer is filled with water and the inner layer is filled with honey. When the temperature reaches 7l°C, hold for a few minutes and then go to the fire. Let it stand for 1 day, remove the surface foam, put in the sterilized glass bottle, and tightly seal the cover to prevent crystallization. China Agricultural Network Editor
