a. Production of garlic oleoresin. Fresh garlic was selected to be slurried in a DX-type high speed tissue grinder. With 55% ethanol solvent extraction, continuous filtration, 40-45 °C, 8.4-8.5kPa, vacuum distillation to recover the solvent, water to get garlic oleoresin. Garlic oleoresin is yellow-brown and turbid. It has a particularly pungent odor, pH 5.95, moisture content of 85.57%, garlic essential oil content of 0.298%, and active ingredient content of 0.4905%. Although the continuous filtration method has a yield of garlic oleoresin of only 7.58%, which is nearly 1/3 lower than the reflux extraction method, but because the post-process requires heating at 90-95°C for 6-8 hours, it is unfavorable for the quality of garlic oleoresin, so the previous method It is appropriate.
b. Ingredients. Oleoresin: edible gum = 1: 0.5-3.5, edible gum is prepared in the ratio of gum arabic: maltodextrin = 0.5: 3: 9.5-7.0. Add water to dissolve and mix.
c. Emulsification. The above material was stirred in a DX-J mixer at a speed of 10,000 revolutions per minute for 3 minutes to form a raw milk, which was passed through a JHG-type homogenizer (20-40 Mpa, 10-15 min homogenization) at room temperature to obtain an O/W type emulsion.
d. Dry. The emulsion was dried in a PGL-3 spray dryer (dry conditions were the same as before) to obtain powdered garlic oleoresin microcapsules. The solids content of this method is generally not 99%, and it is cost-effective.
e. Granulation and finished products. The powdered microcapsules were placed in a fluidized bed granulation chamber of a PGL-3 type spray dryer and agitated to be fluidized and sprayed into fine droplets with an emulsion. As a wet adhesive, a fluidized microcapsule in a spray fluidization granulation chamber is granulated and dried to obtain granular garlic oleoresin microcapsules.
